Ice Cream

I’ve decided that I’m going to try and keep track of every time I eat ice cream for the next year. Then, at the end of the year I can create a year-in-ice-cream annual report.

Katy and I got an ice cream maker from her dad and family for christmas, and now that it’s been assembled and tested out I can already tell you this is going to be a good year for ice cream.

First attempt. Maple Pecan. Katy made it, and from what I’ve been told it contains a lot of maple syrup, and pecans caramelized with brown sugar and butter, then sprinkled with some spicy BBQ rub. Gives the pecans a bit of a salty/spice. And it is really good! I’ll pester her for the recipe, and post it soon.

BBQ Pecan Maple Ice Cream

For Ice Cream:
1C real maple syrup
2C heavy cream
1C whole milk
pinch kosher salt
4 egg yolks

Boil maple syrup until reduced to about 3/4C (5-10 minutes). Combine cream, milk & salt in saucepan over medium-high heat. Whisk in maple syrup. Bring just to a boil. In separate bowl, whisk egg yolks. When milk is at a boil, SLOWLY pour milk into eggs, whisking constantly to temper. Pour back into saucepan and cook over medium-low heat until thickened (about 5 minutes). Pour into container and immediately cover with plastic wrap so it doesn’t form a skin. Chill in fridge for at least 2 hours. Follow ice cream maker instructions.

For Pecans:
4t butter
1/4C brown sugar
1C pecans, chopped
1T sweet & spicy BBQ seasoning
1/2C chocolate chips
pinch kosher salt

Melt butter and sugar in skillet over medium-high heat until sugar is dissolved. Add in pecans, salt and BBQ seasoning, stir to coat pecans and cook until nuts are toasted. Pour nuts on parchment paper and spread out to cool. When cool, coarsely chop and add nuts and chocolate to ice cream maker (typically about 5 minutes before ice cream is finished).

ooh, i wish I had an ice cream maker. Im pretty excited to see this annual report though. I still think you should find another variable to measure it against.
